Two reasons, and one of them is fair. If an app runs servers — syncing your data, hosting accounts, powering social features — those servers cost money every month for as long as you use them. A one-time payment cannot fund an ongoing cost. Habitica running guilds and parties has a genuine recurring bill to pay, and charging a subscription for it is honest.
The other reason is that recurring revenue is simply a better business. Investors value it higher, it is more predictable, and a customer who forgets to cancel is worth more than one who paid once and is happy. That is why subscriptions spread to apps that have no recurring costs to cover.
The test is straightforward: does this app actually run infrastructure on your behalf? If it syncs across devices or hosts a community, yes, and a subscription is defensible. If it is storing a checklist on your own phone, there is no monthly cost to pass on — and the subscription is a pricing decision, not an engineering one.

If you want your habits synced across a phone, a tablet, and a laptop, with a server holding the canonical copy and recovering it when you lose a device, a subscription is the appropriate model and you should pay one. The company has a recurring cost and you are getting recurring value. Nothing about that is predatory.
The mismatch appears when an app charges monthly for something that runs entirely on your phone.
